    Acidity. High acidity in wines makes them tart and zesty.  It can also make them taste lighter and less rich and round than wines with lower acidity.  The feeling on the tongue is fizzy.
    Tannin.  Tannin is a polyphenol found in the seeds and skin of grapes that makes wine taste dry.  On the tongue, tanning tastes bitter and can leave the mouth feeling dry.  It’s contribution to the overall taste of wine is to add complexity.
    Fruit. The alcohol in wine releases aroma compounds that affect the flavor of the wine.  The flavors can vary from raspberries to blackberries to apples to lemons and beyond.  Different fruit flavors are identified with different varietals and different growing regions.  At least two or three different fruit flavors should be identifiable when tasting wine.
    Body.  Wines can be light, medium and full-bodied depending on the wine varietal, where it’s from, how it’s made and its alcohol level.  The taste of more full-bodied wines lasts longer in the mouth than lighter wines.
