The Arrhenius Equation

In 1889, Arrhenius, a Swedish physicist and chemist, proposed a formula to determine the relationship between the rate at which a chemical reaction happens and its temperature.  Essentially his formula determined that the higher the temperature, the faster a chemical reaction will happen.  Since wine aging in a bottle is nothing but a series of chemical reactions, temperature is the critical element in determining how fast or slow those reactions happen and how fast or slow the wine will age.

Cooler Is Better

Over time, wine collectors have determined that a temperature of around 55℉ is ideal for wine storage.  Wine stored at 50℉ or below will hardly age at all.  Decades-old wine can taste good if stored under these conditions for the life of the bottle – this could be the reason that so many great, old bottles of wine that come up for auction are those that come from the cool wine cellars and wine caves of Europe.  In fact, any cool temperature that doesn’t dip down below freezing is fine for wine storage and slow aging.  Just be sure that a wine you’re keeping very cool is one you don’t plan on drinking for a long time.

Fluctuations Are The Enemy

Wine Cellar In Houston TX: 5 Tips For Storing Your Open Wine

You’ve got your wine cellar in Houston TX and you’ve filled it with bottles of your favorite wines – and some that you hope will become favorites.  Let the wine drinking commence!  But what happens when you and your guests don’t finish a bottle?  Do you pour it out and start over the next day with a fresh bottle?  You’d only do that with a wine that tasted awful, for whatever reason.  When you’ve got a great bottle of wine that you just couldn’t finish in one sitting, you have some other options for keeping it to drink another day:
  1.  Re-cork it. Re-cork it correctly, that is.  Wine corks can be difficult to reinsert in the bottle without   effort; but if you can manage it, it’s the simplest way to keep your wine fresh.  The important thing to remember is not to put the ‘clean’ end back in the bottle, even though this end is less swollen.  The clean end has been exposed to the elements and contains contaminants that you don’t want in your wine if you want it to have the same taste the next day.
  1.  Use half-sized bottles.  Air is wine’s enemy.  It flattens wine and lessens flavors and aromas.  If you have half-sized bottles with screw caps, pour the rest of your wine into the smaller bottle with a funnel to reduce the amount of air in contact with the wine.
  1.  Refrigerate it.  You wouldn’t leave open food on your counter so you shouldn’t leave open bottles of wine out at room temperature in your wine cellar in Houston TX after you’ve re-corked them.  Even re-corked wine will break down but refrigeration can slow down that process so you have more time to enjoy your wine.
  1.  Don’t uncork it in the first place.  Wait, what?  Yes, you can drink wine without uncorking it and you can do it with the help of a device called a Coravin.  A Coravin works by piercing the cork with a needle, through which the wine is poured.  At the same time, the device fills the bottle with pressurized argon gas.  Once you’ve poured out what you want, you remove the Coravin and the cork naturally seals itself.  The wine continues to age undisturbed, as if it was never opened, because no oxygen was allowed to contact it.
  1.  Finish the bottle.  Technically, this isn’t preserving the bottle for the next day; it’s emptying it.  But if you’re near the bottom of the bottle and you’re drinking with friends, split the rest of the bottle to avoid storing it till the next day.  You can remind your guests that there are proven health benefits to drinking wine, if they need to be convinced to share what’s left.
